I always go in search of sun in the winter, so every Christmas I go on a beach holiday. Last year, I went to Belize and it was simply beautiful. The beaches and forests were breath-taking and the people were lovely. Straight away, it became one of my favourite places.
We stayed at the Sea Dreams Hotel in Caye Caulker and spent our entire vacation relaxing, snorkelling and indulging in all the fresh seafood that Belize had to offer. I'd highly recommend Habaneros, a nearby restaurant that does superb local food.
Wewere there for New Year's and spent the evening with my brother and his fiancee at Rumfish, a restaurant in Placencia. All the dishes are made using local produce and are given an American twist, like their lobster spaghetti. They're renowned for having the best wine list in Belize, but I say go for the cocktails. The whole evening was simply amazing - such great atmosphere and the perfect way to ring in the new year.
I always pack multiple pieces of swimwear so that I have options when I’m away. Thankfully they don’t take up a lot of luggage space!
